raw almond & date truffles

I've been inspired to experiment with different ingredients and create my own sweet treats.  Here’s one of the recipes I tried this week :

1 cup  almonds
2/3 cup pitted dates or figs
1 chopped peach
1/4 tsp cinnamon
chopped ginger
1/2 tsp organic vanilla extract
2 tsp organic cocoa powder
grated coconut
Grind almonds in food processor .
Add the rest of the ingredients and blend together.
Taste to adjust quantities above to your own taste .
Form 1″ balls .
Roll truffles in grated coconut .
Refrigerate until firm .
Change quantities and experiment with other nuts and seeds ( cashews,  pecan, walnuts, etc) . Perhaps you can use other fruit and spices : instead of peaches you could use grated carrots or bananas. Have fun with it !
